Can a simple motor produce electricity?

Every electric motor generates electricity when it runs as a motor. Back EMF is the energy that is produced. Back EMF is produced when the motor turns faster. Back EMF is at its maximum speed when it matches the input voltage. If more voltage is applied to the motor, back EMF will increase and limit the speed. A load must be attached to limit speed.
