  1. Before the construction of the dairy cooling facility and the layout of equipment begin, be sure that you have all the legal approvals required are obtained. These approvals comprise:
    • Acceptance from National Environmental Management Authority (NEMA)

Eligibility

  1. A license for processing milk is granted to cooling facilities for milk that handle more or less than 5 millilitres of raw milk per day.
  2. The cooling facilities for milk must meet the laid out hygiene and operational standards. This includes compliance in the following areas;
    • The premises should be correctly situated properly, designed, ventilated lit and free of contamination
    • Equipment: Equipment pipes, accessories , and other surfaces that come into contact with milk or milk products ought to be simple to clean and disinfect, being resistant to corrosion and made of food-grade materials
    • Personnel: All milk handling employees must be well-groomed and clean appropriately dressed and certified medically
    • Record keeping: High-quality records should be kept and maintained.
    • Waste management: Effluents and other solid wastes need to be handled in accordance with the regulations
    • Utilities: Affordable supply of potable water as well as other essential utilities based on the kind of operation
    • Management: The premises must be handled by a competent manager or supervisor.
    • Operations: Recommended processing times must be adhered to, e.g. temperature controls and cooling.
    • Control of vermin and rodents Facilities should be guarded from encroachment by flies rodents, birds, and other vermin.
